Abstract

Objetivou-se abordar aspectos históricos da Nutrição no Brasil, desde o florescimento da profissão de nutricionista até os desafios no contexto atual. É uma pesquisa de enfoque reflexivo, a partir da produção em obras clássicas e artigos científicos. Desde o início, a Nutrição vinculou-se ao caráter biologista frente ao binômio desnutrição-nutrição e saúde, com atuação em ambiente hospitalar. Aos poucos, o nutricionista foi conquistando outros espaços sociais. Estimula-se à interlocução com outras ciências, contribuindo à expansão da profissão. Os desafios são necessários, visando formar profissionais com perfil generalista, humanista e crítico, contribuindo à segurança alimentar da população.
