AVALIAÇÃO DAS PRÁTICAS DE FABRICAÇÃO EM PADARIAS: Um Estudo Exploratório no Município de Ijuí-RS

O texto apresenta os resultados de um trabalho de investigação que teve como objetivo avaliar as práticas de fabricação de pães entre um grupo de panificadoras no município de Ijuí-RS. O trabalho caracteriza-se por ser um estudo exploratório no qual se utilizaram critérios estabelecidos pelo Ministério da Saúde para avaliar itens referentes às condições higiênico-sanitárias, de funcionamento e de produção. Os resultados indicam que as principais inadequações referem-se às áreas de produção, aos equipamentos e utensílios, à matéria-prima, o processamento, os manipuladores e o transporte. Conclui-se que há necessidade de maiores investimentos por parte dos estabelecimentos na melhoria da infra-estrutura, do processo de produção e, em especial na qualificação de trabalhadores destes estabelecimentos. Estas ações devem ser apoiadas pelos órgãos de saúde, aos quais cabe também a fiscalização com vistas à segurança do alimento e conseqüentemente a saúde do consumidor.Downloads
